What is Beef Kala Bhuna?

Beef Kala Bhuna is a traditional Bangladeshi beef dish, especially popular in Chattogram (Chittagong) and Sylhet. The name “Kala Bhuna” means “black fry” because the beef is slowly cooked and fried with spices until it turns a dark brown/black color.

Texture: Tender beef with a dry, thick masala coating.

Taste: Rich, spicy, and slightly smoky, with layers of fried onions, garlic, ginger, and chili.

Authentic Preparation (Short Version)

  1. Marination: Beef chunks are marinated with yogurt, ginger-garlic paste, salt, chili powder, turmeric, and coriander powder.

  2. Frying Onions & Spices: Large amounts of onions are fried golden brown, then ginger, garlic, dried red chilies, and garam masala are added.

  3. Slow Cooking & Bhuna (Frying): The marinated beef is added and cooked slowly on low heat until the oil separates and the beef turns dark.

  4. Finishing: Cooked until the gravy becomes thick and sticks to the beef pieces, giving it a deep black color.
