The 3 mezcals everyone should try before buying another tequila

Most people's "mezcal experience" is a smoky shot that tastes like a campfire. That's like judging all wine by boxed Franzia.


Here's what I actually recommend when someone says "I want to try mezcal":


1. An espadín from Oaxaca — This is the gateway. Look for something from Santiago Matatlán. It should taste like roasted agave, citrus, and a gentle smoke — not a house fire. Think of it as the "chardonnay of mezcal."


2. A tobalá — Wild agave, takes 12-15 years to mature. The flavors are complex — tropical fruit, minerality, herbs. This is the one that makes people go "wait, THIS is mezcal?"


3. A pechuga — Distilled with fruit and sometimes a chicken or turkey breast hanging in the still. Sounds wild, tastes incredible. It's ceremonial, it's special, and it'll completely rewire how you think about spirits.


The key with all three: sip, don't shoot. Use a copita or jícara, not a shot glass. Let it breathe. The experience is completely different.
