The 3 grind-size mistakes that ruin 90% of home-brewed coffee

I've sourced beans from farms in Ethiopia, Colombia, Sumatra, and Kenya for the last few years, and the #1 thing that separates a $9 grocery-store cup from a $30/lb single-origin experience isn't the beans — it's the grind.


Here are the 3 mistakes I see constantly:


1. Using one grind size for every brew method. A pour-over needs a medium-fine, consistent grind. A French press needs coarse. If you're using the same setting for both, you're either over-extracting (bitter) or under-extracting (sour/weak) one of them every time.


2. Grinding too far ahead of time. Coffee starts losing aromatic oils within 15 minutes of grinding. If you're prepping your grind the night before or first thing before work, you're brewing stale coffee without realizing it. Grind right before you brew — every time.


3. Ignoring the origin. Washed Ethiopian beans (bright, floral, high acidity) want a slightly finer grind and lower temp than a natural-processed Sumatra (heavy body, low acidity) which can handle coarser grinds and hotter water without turning bitter. Treating every origin the same flattens what makes each one interesting.
