5 mistakes every beginner cook makes (and how to fix them)

I've been cooking for years and teaching beginners even longer. Here are the 5 things I see new cooks mess up the most — and they're all easy fixes:


1. Not reading the full recipe first.

You end up scrambling halfway through because you didn't realize something needed to marinate for 2 hours. Read it top to bottom before you touch a pan.


2. Crowding the pan.

If your chicken is steaming instead of getting that golden brown sear, there's too much in there. Give your food space to breathe.


3. Underseasoning.

"Season to taste" isn't optional. Taste as you go. Your food should taste good at every stage, not just at the end.


4. Cooking on too high heat.

High heat ≠ faster cooking. It means burnt outside, raw inside. Medium heat is your best friend for most things.


5. Not prepping before you start cooking.

Chop everything, measure your spices, have your oil ready. Once the heat is on, things move fast.
