Every month, we're opening up the menu to YOU. Submit a Creole dish idea — tell us the name, what's in it, and why it hits. If we pick your dish to serve on the menu, you eat free for an entire month. That's 20 plates. On us.


No catch. We just want to keep the menu fresh and hear what the people actually want to eat.

The secret to a real Creole roux (and why most people burn it)

Most people rush the roux. That's the #1 mistake.


A proper Creole roux takes patience — you're stirring flour and oil over medium heat for 30-45 minutes until it turns that deep chocolate brown. The moment you smell it getting nutty and it looks like melted dark chocolate, that's when you know.


Here's what separates a good gumbo from a great one:


  • Dark roux — not blonde, not peanut butter colored. Chocolate.

  • The holy trinity — onion, celery, bell pepper. Equal parts. Non-negotiable.

  • File powder at the end — never while it's boiling, or it gets stringy

  • Let it sit overnight — gumbo is always better the next day
