Why most 'artisan' bakeries are lying to you (and what real specialty baking actually looks like)

I've been baking for years, and the word "artisan" has been completely hollowed out.


Walk into any grocery store and you'll see it slapped on a $4 loaf that came out of an industrial oven 200 miles away.


Here's what real specialty baking actually involves:


Ingredients that aren't shortcuts. Real cultured butter. High-protein heritage flours. Seasonal fruit sourced locally. These aren't talking points — they show up in the texture, the smell, and the way something tastes three days later.


Time you can't fake. A proper croissant takes three days of lamination. A sourdough boule needs a 48-hour cold ferment. You can't rush fermentation, you can't microwave proper caramelization.


Custom orders done right. When someone places a custom order with me, I ask about the occasion, dietary needs, flavor preferences, and how it's being served. The order form is a conversation, not a transaction.
