True wagyu is graded (A5 being the highest). If a company can't tell you the grade, it's likely a wagyu-cross, which is a different (much cheaper) product.
2. Dry-aging time matters more than the word 'aged'
Anything under 21 days barely changes flavor. 35-45 days is where you get real depth — but it costs more to produce, so a lot of boxes skip it.
3. Look at where the cuts come from
Small-batch butchers source from specific farms they can name. Mass boxes buy from wherever's cheapest that month, so quality swings between shipments.
