One wine list read cold, as the guest choosing in two minutes and the server selling in thirty seconds read it: the price ladder checked for the gaps guests fall into, the glass pour checked against the styles they ask for, and every dish checked for something to drink with it. The house red is £28 and the next red is £74. Most tables want the wine that is not on the list. Priced per list, one payment, nothing recurring.
