5 dishes that changed how I cook forever

I used to cook the same 10 meals on repeat. Chicken, pasta, stir fry, repeat. Then I started researching recipes from countries I'd never cooked from — and it completely changed my kitchen game.


Here are 5 dishes that leveled me up:


1. Shakshuka (Tunisia/Israel) — Eggs poached in spiced tomato sauce. Took 20 minutes, used pantry staples, and taught me how much cumin and paprika can transform simple ingredients.


2. Jollof Rice (Nigeria) — One-pot rice dish that's all about layering flavor. The trick is letting the bottom crisp up. Once you nail this, you'll never make boring rice again.


3. Khao Soi (Thailand) — Coconut curry noodle soup with crispy noodles on top. Sounds complex but it's shockingly easy. The coconut milk + curry paste combo is a cheat code.


4. Arepas (Venezuela/Colombia) — Cornmeal pockets you can stuff with anything. Simple to make, endlessly customizable. My go-to weekend breakfast now.


5. Daal Makhani (India) — Slow-cooked black lentils in a creamy, buttery sauce. Cheap, high-protein, and the kind of comfort food that makes you wonder why you ever reached for instant ramen.


The common thread? None of these required exotic equipment or hard-to-find ingredients. Just a willingness to try something new.
