Your "local" produce is sitting in a warehouse 200 miles away

Most hotel kitchens think they buy local. The invoice says a farm name. The crate still came through a distributor who aggregated it, sat on it, and marked it up 25 to 40 percent.


I have watched chefs spend Tuesday morning calling eight farms, getting voicemails, then defaulting to Sysco because service is in six hours. The farms wanted the account. The kitchen wanted the product. Nobody had a room where both sides showed up.

What actually works when a hotel buys farm-direct

  • Order by Tuesday for Thursday drop. Farms harvest to the ticket, not to a cooler they hope you empty.

  • Spec the cut and the pack. "Greens" is how you get a mix you cannot plate. "4 cases of washed arugula, 3 lb bags" is an order.

  • Put a name on receiving. If the night porter does not know a farm truck is coming, the crate sits on the dock.

  • Pay on the terms you promised. One late check and a small farm will not harvest for you again.
