Most people think grilling is about throwing expensive cuts on high heat and hoping for the best. That's how you end up with a charred outside and raw inside every single time.
Here's what we've learned running M&I Social Kitchen and Grills:
1. Let the grill get fully hot before anything touches it. We're talking 15-20 minutes of preheating. The grate should be almost white-hot. This is what gives you those clean grill marks and that perfect sear.
2. Stop flipping. One flip. That's it. Every time you flip, you lose juices and break the crust. Patience = flavor.
3. Rest your meat. 5-10 minutes off the grill before you cut. The juices redistribute and the difference is night and day.
4. Season simply. Salt, pepper, garlic powder, and a good oil. You don't need 15 ingredients to make food slap. Let the smoke and the fire do the work.
