Chances are you'll find palm oil listed somewhere. It's in roughly 70% of mass-produced chocolate. Here's why brands use it: it's cheap, it extends shelf life, and it gives a smooth texture without needing as much actual cocoa butter.


The trade-off? You're eating a bar that's more about margins than flavour.


Palm oil dilutes the cocoa butter content — which is literally what makes chocolate taste like chocolate. It also contributes to deforestation at a massive scale, particularly in Southeast Asia.
