Why your macarons keep failing (it's not the recipe)

Baking is chemistry. A tablespoon of almond flour can vary by 5-8 grams depending on how you scoop it. That's a 20% margin of error on a recipe that tolerates maybe 3%.

Here's a quick conversion cheat sheet for common macaron ingredients:
1 cup almond flour = ~96g (but your scoop might give you 88-112g)
1 cup powdered sugar = ~120g
1 large egg white = ~30g (they vary more than you think)
Once I started weighing to the gram, my fail rate went from ~40% to basically zero. The difference between a hollow shell and a perfect one is literally 3 grams of egg white.
If you're serious about baking, a precision spoon scale changed everything for me. Faster than a regular kitchen scale and way more accurate for small amounts like leavening agents and extracts.
