Here's what separates a quality piece from a cheap one:

For chains: Look at the clasp. A quality lobster clasp clicks firmly with no wiggle.

For rings: Check the inner band. If it's hollow, it'll bend. Solid bands hold shape.

For earrings: Sterling silver or surgical steel for the post. Anything else and your ears will know within days.
