Most people don't have a spending problem. They have a tracking problem they refuse to maintain.
A spreadsheet only works if you open it every day. You won't. After two missed days the numbers are fiction, so you abandon it and go back to guessing.
That's the whole game. Not "discipline." Not "more categories." A system that needs daily upkeep will lose to a system that fits in 15 minutes on a Sunday.
I stopped building budgets I wouldn't keep. I built a weekly audit instead: one note, one calendar block, one hunt for charges that are still alive.
If you've got eight subscriptions you forgot about, you already know the number is worse than you think. The people who "can't stick to a budget" usually built a system that required a second job.
Cut the system down until it fits a Sunday.
