Why 90% of home bakers fail the same 3 recipes (and how to fix it)
Ran a small poll in my own baking circle and the pattern was obvious: sourdough, croissants, and macarons wreck more home bakers than anything else. Not because the recipes are hard — because most recipe blogs skip the part that actually matters.
Here's what almost never gets mentioned:
Sourdough — your starter isn't 'dead,' it's under-fed. Most people feed 1:1:1 and wonder why rise is weak. Go 1:2:2 for a faster, more active starter before you ever touch flour for the loaf.
Croissants — the butter block temperature matters more than the lamination technique. If your kitchen is above 72°F, you're fighting butter that's too soft to laminate cleanly. Chill your rolling pin, not just the dough.
Macarons — 'macronage' (folding the batter) is where people either over-mix (flat, spreading cookies) or under-mix (lumpy, cracked tops). You want the batter to fall off the spatula in a slow ribbon, count to 10 while it disappears back into the bowl — that's the number, not a vibe.
