The 80/20 of home cooking: 5 techniques that replace 50 recipes
You don't need 500 recipes memorized. You need 5 techniques you can run on autopilot. Learn these and you can improvise dinner from whatever's in your fridge.
1. The Pan Sauce
Sear protein, remove it, add aromatics + liquid (wine, stock, or even water) to the hot pan, scrape up the browned bits, reduce, swirl in butter. This single move upgrades chicken breast, steak, pork chops — anything.
2. The Sheet Pan Roast
Protein + vegetables, cut to similar sizes, tossed in oil/salt/pepper, one pan, 400-425°F. Stagger add-in times based on density (potatoes go in first, delicate greens go in last 5 minutes). Dinner with almost no cleanup.
3. The Braise
Tough, cheap cuts (chuck, shank, thighs) + liquid, low and slow (275-325°F oven or low simmer), covered, 2-4 hours. Time does the work. Great for meal prepping in bulk.
4. Fried Rice / Grain Bowl Logic
Day-old rice or grain + hot fat + whatever vegetables/protein you have + egg + soy sauce or salt. This is how you use up leftovers instead of tossing them.
5. The Quick Pickle
Vinegar + water + salt + sugar (roughly 1:1:small pinch each), pour over sliced vegetables, wait 30 minutes. Instantly makes bland meals taste like a restaurant dish.
