Most people think Indian cooking requires 30 different spices. It doesn't.
If you keep these 5 in your kitchen, you can make dal, sabzi, biryani, curry, and chaat:
1. Cumin (jeera) — The foundation. Temper it in hot oil before anything else. That sizzle is where the magic starts.
2. Turmeric (haldi) — A pinch goes a long way. Color, earthiness, and health benefits. Don't overdo it or everything tastes like medicine.
