We run Akshara Family Restaurant A/C, a local biryani joint (3.8★, 772 reviews). One thing that's worked well for us: instead of trying to be open and orderable 24/7 like the big delivery apps push you toward, we capped ordering strictly to 8 AM – 9 PM.
Why it matters for a small kitchen:
Biryani needs dum (slow-cook) time — rushing it outside those hours kills quality

Customers know exactly when to expect fresh batches, not reheated leftovers
Our menu is simple on purpose: Chicken Biryani (₹200) and Mutton Biryani (₹400). No 40-item menu to manage, no ingredient waste, and every dish gets made fresh per order.
