5 mistakes every beginner makes in the kitchen (and how to fix them)

I've taught hundreds of people how to cook from scratch. These are the 5 things that trip up almost everyone:


1. Not reading the full recipe first. You start cooking, then realize you needed to marinate something 2 hours ago. Read it all the way through before you touch a pan.


2. Crowding the pan. If you pile too much in, nothing browns — it steams. Cook in batches. Patience = flavor.


3. Under-seasoning. Most beginners are scared of salt. Season as you go, taste constantly. Your food should taste like something.


4. Cooking on the wrong heat. High heat isn't always better. Learn when to go low and slow vs. when to crank it up. This alone will change your cooking overnight.


5. Not letting meat rest. You pull that steak off the heat and cut it immediately? All the juice runs out. Let it sit for 5-10 minutes. Trust the process.
