The Real Reason Your Jollof Doesn't Hit Like It Should
Most people make the same 3 mistakes with jollof rice. I see it every day.
1. You're not toasting the tomato base long enough. That smoky, deep red color? It takes patience. If your stew still looks orange, you're not done. Let it fry until the oil floats on top and the color darkens. That's where the flavor lives.
2. You're using too much water. Jollof is not supposed to be soupy. The rice should steam in the sauce, not swim in it. Use just enough liquid to barely cover the rice, then seal the pot tight.
3. You skip the bottom burn. That crispy layer at the bottom of the pot — the "party jollof" effect — isn't an accident. It's intentional. Lower the heat at the end and let it sit. That's the signature.
