Why we bake our dough for exactly 72 hours

Most pizza spots press dough and fire it same day. We don't.


Our dough cold-ferments for 72 hours minimum. Here's why that matters:


Flavor. Slow fermentation develops complex, slightly tangy notes you can't rush. That's the difference between "good pizza" and "I need to come back tomorrow."


Texture. 72 hours gives you that thin, crispy base that still has just enough chew. No cardboard, no soggy center.


Digestibility. Longer fermentation breaks down gluten more completely. Easier on your stomach, better for your body.
