What I learned running a pizza pop-up with $0 marketing budget

Started Damn Good a few weeks back as a Thursday-Sunday wood-fired pizza pop-up. No storefront, no ad spend — just a mobile oven and word of mouth. A few things that actually moved the needle:


Free entry, paid pizza. People will walk past a $25 ticket booth but they won't walk past the smell of a wood-fired oven. Dropping the cover charge and pricing pies at $17 each got 3x more foot traffic in week one. Impulse buys beat commitment purchases every time for a pop-up.


Late hours are the unlock. Running 7pm-2am instead of a normal dinner window means we catch the bar crowd on the way home — that's when a $17 pie feels like a steal, not a splurge.


The oven is the show. Don't hide the cooking — put the oven front and center. People post it, tag friends, and come back to see it again.


If you're thinking about running a food pop-up: keep the entry free, make the cooking visible, and go late. That's the whole playbook so far.
