The 3:2:1 Rule — Why Most Homemade Cocktails Taste Off (And How Bakers Fix It)
Most home cocktails fail for the same reason most home baking fails: the ratios are wrong.
The problem
You follow a recipe. It calls for "juice of one lime." But limes vary wildly — one might yield 15ml of juice, another 35ml. That's a 130% variance in your acid component. No spec sheet survives that.
Bakers solved this decades ago. We weigh everything. Cocktail craft needs the same discipline.
The 3:2:1 framework
For spirit-forward sours (Daiquiri, Whiskey Sour, Margarita family):
3 parts spirit (60ml / 2oz)
2 parts citrus (30ml / 1oz) — weighed, not squeezed-and-hoped
1 part sweetener (15ml / 0.5oz)
This gives you a balanced starting point. From here, you taste and adjust — exactly like adjusting salt in a dough.
The baker's edge
Here's what most bartending guides won't tell you:
Sugar concentration matters more than sugar volume. A 1:1 simple syrup and a 2:1 rich syrup deliver completely different sweetness at the same volume. Bakers understand brix and saturation intuitively — we work with sugar every day.
Acid isn't just "sour." Citric acid (lemon) tastes sharp and bright. Malic acid (apple) tastes round and persistent. Tartaric acid (grape) tastes dry and mineral. Understanding which acid you're using changes how you balance the drink — just like choosing between buttermilk and yogurt changes a cake.
Temperature affects perception. A cocktail that tastes balanced at room temp will taste less sweet and more bitter when ice-cold. Build your cocktails slightly sweeter than you think they need to be. The dilution and chill will bring them into line.
Try this tonight
Make a classic Daiquiri using the 3:2:1 spec:
60ml white rum
30ml fresh lime juice (weigh it: 30g on a kitchen scale)
15ml 2:1 rich simple syrup
Shake hard with ice for 12 seconds. Strain. Taste it.
Now make a second one with 20ml lime and 20ml syrup. Taste the difference. That's what balance training feels like.
