The real cost of not eating fresh vegetables

I ran the numbers on my own grocery habits last month and it was eye-opening.

I was spending $45-60/week on produce that I'd end up throwing away 30-40% of. Between the stuff that went bad before I could use it and the impulse buys I never touched, I was basically paying $15-20/week for my compost bin.

Here's what most people don't think about with "cheap" grocery store produce:

1. It's already old when you buy it. Most supermarket vegetables travel 1,500+ miles and sit in warehouses for days before hitting shelves. By the time you get it home, you've already lost 2-3 days of freshness.

2. You overbuy because you're guessing. Without a plan, you grab more than you need "just in case." That extra bunch of cilantro? Straight to the trash.

3. The nutrition drops fast. Spinach loses up to 90% of its vitamin C within 24 hours of harvest. The "fresh" spinach at the store is usually 4-7 days old.

We started FreshBox to solve this for people like us — busy professionals who want to eat well but don't have time to think about it. 6-8 hand-picked, locally sourced vegetables, delivered weekly. You eat better, waste less, and actually save money.
