The 3 Blackstone mistakes that ruin every cook (and how to fix them)

2. Overcrowding the surface. The flat top is big, but it's not infinite. Too much food drops the temperature fast. Cook in batches. Your patience will be rewarded with actual crust instead of grey, soggy meat.
3. Skipping the seasoning maintenance. That first seasoning is just the start. Every cook should end with a thin oil wipe-down while the surface is still warm. This is how you build that non-stick, black mirror finish over time.
