The #1 mistake home cooks make (and how to fix it)

Most people who want to cook better think they need better recipes.


They don't. They need better fundamentals.


After years of cooking and sharing recipes, the single biggest gap I see: home cooks skip the "why" behind techniques and just follow steps. So when something goes wrong — the sauce breaks, the chicken dries out, the pasta clumps — they're stuck.


Here are 3 fundamentals that changed everything:


1. Season in layers, not at the end.

Salt added at the beginning draws out moisture and builds depth. Salt added at the end just tastes salty. Season your onions when they go in, your protein when it hits the pan, and taste as you go.


2. Let your pan actually get hot.

A cold pan is the enemy of a good sear. Most home cooks add food too soon, which causes steaming instead of browning. Wait until you see the first wisp of smoke, then add your oil.


3. Rest your meat — every time.

5 minutes of rest after cooking lets the juices redistribute. Skip it and they all run onto the cutting board. The difference is significant.


Master these three and your cooking immediately levels up — regardless of what recipe you follow.
