Why most "French" ingredients you're buying aren't actually French

Walk into any grocery store and you'll find shelves of "French" mustard, "Provençal" herbs, and "sea salt from France."


Most of it is blended, diluted, or relabeled from multiple countries.


Fleur de sel — True fleur de sel from Guérande or Camargue is hand-harvested from the surface of salt ponds only in dry, windy conditions. The crystals are irregular and moist. If yours pours freely from a shaker, it's probably not real fleur de sel.


Herbes de Provence — The authentic blend contains no basil, includes sarriette (savory), and has a subtle lavender undertone. It should smell like the garrigue — the wild scrubland of southern France. Not Italian seasoning.


Saffron — France produces very little saffron (mainly in the Quercy region) and it's exceptional. Almost all "French saffron" sold at retail is Iranian or Spanish, regraded and relabeled. Real French saffron costs more and is worth every cent.
