The 5 kitchen mistakes that keep home cooks stuck (and how to fix them)

Most home cooks hit the same wall. Not because they don't care — but because nobody told them these things.


1. You're salting at the wrong time.

Salt early, not at the end. Adding salt during cooking draws out moisture and seasons from the inside. Sprinkling at the table is just surface noise.


2. Your pan isn't hot enough.

A lukewarm pan is why your food sticks and steams instead of sears. Let it heat for 2 full minutes before anything goes in. It feels excessive. It's not.


3. You're overcrowding the pan.

One layer, with space between pieces. Crowding = steam = gray, sad food. If you have too much, cook in batches.


4. You're not tasting as you go.

The best cooks taste constantly. They adjust. They catch problems early. Cook from memory and you're guessing.


5. You're skipping the rest.

Meat needs to rest after heat — 5 minutes minimum. Cut too soon and all the juice runs out onto your board. Patient = better plate.
