5 Layout Mistakes That Kill Cafe Revenue

Most cafe owners obsess over the menu but completely ignore the one thing that actually controls how much people spend: the layout.


After designing dozens of cafe spaces, here are the 5 layout mistakes I see over and over:


1. Putting the register too close to the entrance

Customers walk in and immediately feel pressure to order. They haven't even looked at the menu board yet. Move the register deeper in — force them to walk past the display case first.


2. Dead zones with no seating purpose

Every corner needs a reason to exist. That awkward 4ft gap between the counter and the wall? That's a two-top with a shelf. Dead space = lost covers.


3. Ignoring the "Instagram corner"

Whether you like it or not, your best marketing is free photos from customers. Design ONE spot that's obviously photogenic — good light, interesting backdrop, comfortable seating. It pays for itself.


4. Kitchen flow that crosses customer paths

If your barista has to walk through the dining area to restock, you've got a traffic problem. Design your back-of-house flow so staff movement is invisible to guests.


5. Uniform lighting everywhere

Bright, flat lighting kills ambiance and shortens visit time. Layer your lighting — bright at the counter, warm and dim at tables. People stay longer (and order more) in cozy light.


The layout IS the business. Fix these five things and you'll see the difference in your daily revenue.
