I've watched hundreds of people bake chocolate chip cookies. The most common mistake? They pull them out too late.
Cookies keep cooking on the hot sheet after you take them out. If they look perfectly golden when you pull them, they're already overdone by the time they cool.
The fix: Pull them when the centers still look slightly underdone — puffy, a little glossy, maybe even jiggly. Give them 5 minutes on the sheet. They'll firm up into that perfect soft-center, crispy-edge cookie.
Other quick wins:
Chill your dough 30 minutes before baking (controls spread, thicker cookies)
Use an oven thermometer — most ovens run 25°F off
Brown sugar = chewy, white sugar = crispy. Adjust to your preference
