The 3 mistakes killing your espresso (and how to fix them today)
I've helped hundreds of home baristas dial in their shots. These are the three mistakes I see every single time:
1. Your grind is too coarse.
If your shot pulls in under 20 seconds, you're under-extracting. The result? Sour, thin, disappointing. Tighten that grind one click at a time until you're hitting 25-30 seconds for a double.
2. You're not purging the group head.
Run water through the group head for 2-3 seconds before locking in the portafilter. Old grounds and stale water sitting in there are muddying your flavour. Takes 3 seconds. Massive difference.
3. You're using stale beans.
If your beans don't have a roast date on them, that's a red flag. Espresso peaks 7-21 days after roasting. After that, you're fighting a losing battle with extraction.
Fix these three things and your next shot will be noticeably better. No new equipment needed.
