How to tell if your fish is actually fresh (from a 40-year fishmonger)

Most people have no idea what fresh fish looks like. Here's what I look for after 40+ years in the trade:


Eyes β€” They should be clear and bright, not cloudy. Cloudy eyes = old fish.


Smell β€” Fresh fish smells like the ocean, not "fishy." If it stinks, walk away.


Flesh β€” Press it with your finger. It should spring back. If it stays dented, it's been sitting too long.


Gills β€” Lift the flap. Bright red = fresh. Brown or grey = past its prime.


Skin β€” Should be shiny and metallic, not dull or slimy.


Supermarkets move fish slow. By the time it hits the shelf, it's often 5-7 days old. That's why I've spent my career bringing fish straight from the boats to your door.


Been doing this since 1981 and won a national award along the way β€” but the real prize is seeing people's faces when they taste proper fresh fish for the first time.
