What most restaurants get wrong about sourcing oyster mushrooms

Been growing oyster mushrooms for wholesale supply and the biggest mistake I see kitchens make is treating mushroom orders like produce orders — ordering in bulk once a week and hoping it holds up.


Oyster mushrooms lose moisture and texture fast. Fresh ones are best used within 3-4 days of harvest. If your supplier isn't harvesting to order, you're already getting a product that's a few days old before it hits your walk-in.


What actually works:

  • Weekly standing orders synced to your menu cycle, harvested within 24-48 hrs of delivery

  • Keep dried/powdered oyster mushroom on hand as a backup for stocks, broths, and off-season menu items — doesn't degrade in quality

  • Ask your supplier when they harvest, not just when they ship
